How do you make mashed potato pancakes?

We just mixed them with flour and pepper.
Add enough flour that it can be pressed out easily.
Roll up some in a ball, then flatten it out.
Put it into a skillet with a bit of hot cooking oil and fry on each side. Fry it slowly so it gets hot in the middle.
* some people add in onion and/or a beaten egg as well
We never used a recipe, since we never knew how much leftovers there would be.

250 gm - potato(boiled,peeled and mashed)
50 gm - maida flour
Ghee or butter- one large spoonful(10g)
salt to taste.
Green chillies (if preffered chilly hot.add chopped fine to the batter)
Mix the mashed potatoes with butter/ghee, maida flour, salt and enough water to make a smooth batter. Make round pancakes on a hot greased tawa roasting both sides.

2 c. leftover mashed potatoes
1 tbsp. butter
1 tbsp. seasoned salt
Beat egg slightly. Stir potatoes and egg together. Melt butter in heavy skillet until hot, but not smoking. For each pancake, drop tablespoon of batter into hot skillet. Sprinkle with seasoning. Turn when brown and firm. Serves 4.
(I occassionally like to add black pepper, finely chopped bell peppers & onion)
