"As page manager, you will be required to make at least one significant contribution to your page every 10 days. If you do not make any significant edits to your page in 10 days, you will receive a warning by e-mail. After that, you have 5 days to make an edit. After 15 days, the page will be taken away from you and recirculated into our system."

I don't think they are going to take the pages away, as he said they will be cool about it.

What is the process for a Mahalo 2.0 page management expiring?
Will there be a notice of some sort if a Mahalo 2.0 page you are managing needs updating/will be lost?

Yes, you will be alerted. Jason was asked this question earlier, and he said: "Re: cut off for 10 days we're gonna have it alert folks--not automatically take pages away. Policy is we will "be cool" about it."
I don't think they are going to take the pages away, as he said they will be cool about it.
