Dicing and cubing are the same thing. You cut the item into roughly 1/2 inch cubes, resembling dice.
If you want to do something different, dreidel them. That would be four sides, but a pointed bottom and a toothpick through the top so that you can spin them.

Diced vegetables can be any size, length, width, etc. and it doesn't matter if they're symmetrical. Typically, when you cube a vegetable, you cut length width and heightwise to match as well as you can, creating little cubes. It is slightly more difficult to do, although it makes little difference tastewise and is often less time-consuming and more efficient to dice vegetables. It also reduces your carbon emissions by causing you to spend less time cooking(as long as you chop your vegetables as small as possible, like you should).
