1. Accidentally: In most cases, infidelity is uncovered by mistake when the person is caught in the act or the truth is revealed by a 3rd party.
2. Monitoring: There are a variety of surveillance methods that can be used. However, their usage brings up ethical concerns for some.
If you decide to go that route, here are some tips:
1. Keep a written record of your partner's activities. This will allow you to compare inconsistencies.
2. Keep track of all incoming phone calls.
3. Plan a surprise visit to their work, come home unexpectedly, or say you have to work late then come home early.
4. If possiple, check their cell phone messages and calls.
5. Surveillance equipment like hidden cameras, computer monitoring software, or gps devices may be an option.
6. One of the best ways to catch a cheater is to hire a private investigator to track them.
Above all, do not confront your spouse until you're certain you have enough evidence to make a foolproof case.

use a GPS tracker. Here is a site with a news video clip that explains the technology, and a link to a site that sells the devices. http://www.trackstick.com/

I guess that my answer would be, why would you want to? If your situation is such that you have lost that much trust, then it's time to consider bailing. So instead of spending money to consult a detective, I would suggest that you consult a divorce attorney or a marriage counselor.

What is the point of discovering the infidelity? If you are just dating with no kids - leave now. If you don't have any trust now then cut your losses and move on.
If you have decided to get a divorce and want prove to help your case. Go for a PI from the yellow pages. That way it is documented by an outside licensed professional which will look much better to the judge.
If you just are uncertain and worried, then you need to talk to your significant other. Perhaps you are overreacting or there is something. True, you could make them hide it better or stop which will make it difficult to catch them later. But if you want to salvage the relationship then open communications is the first step.
