This one is simple, easy and tasty:
baby bok choy
soy sauce
garlic
Soba sauce
Get baby Bok Choy, and choose the smallest heads you can find. Cut each one in half lengthwise like this:

Wash thoroughly and discard any wilted outer leaves.
In a large fry pan or skillet, add enough water to half cover the bok choy if you laid them in the pan cut side down. (Don't add the bok choy yet). Give the water a generous splash of soy sauce and a heaping teaspoon of garlic and stir it all up. Heat on high until it boils.
Add the bok choy and cover. Steam/boil for a couple of minutes in the covered pan. Uncover and flip so that the other side gets cooked too. I can't give you precise cooking times, because it will vary according to the size the baby bok choy you are using. The goal is to leave the bok choy firm, yet cook away most of the crunchiness or toughness.
When it is cooked to your liking, dump everything into a colander or strainer over the sink and discard the liquid. Let it completely drain so that there isn't much salty soy sauce left in it. Move it to the serving dish.
Sprinkle the cooked bok choy lightly with Soba Sauce
