From the information I have gathered, it does not look like it is illegal to take sausages on a plane. Take a look at this list and see for yourself. http://www.airsafe.com/danger.htm

You cannot take liquids (over 3 ounces) on board. Food should be fine if you are flying domestic. It could be an issue on international flights depending on where you are flying and how it is packaged.

Food is probably prohibited past a certain point. You will need to check your airline to see what items are permissible for transportation. Also, there are guidelines for packaging the food because they will subject to X-Ray.

TSA does not exclude food.

It will depend on the rules of the airline.
