To be an undercover cop you have to be able to pretend you're a criminal, or a client of a criminal, which is still being a criminal, it's just that as a client you're paying to be a crook instead of being paid to be a crook.
Interpol deals in international issues crossing national borders, sorta like the way FBI deals with issues crossing state boundaries (It was started by the Nazis during WWII in order to coordinate law enforcement between all the countries that the Nazis had conquered, and it worked so well that the allies kept it intact and took it over after the war) so that usually means the business of smuggling, which usually means drugs, guns, and/or prostitutes.
It means being able to pass convincingly as a member of a gang, which means being willing and able to do all kinds of things to convince the gangs that you're not undercover and that you're comfortable using their style of force in the most convincing ways possible, so be prepared to show them how you can crank a stranger with a drug overdose, shoot and kill a stranger, and beat up prostitutes and probably rape them afterwords in order to show discipline.
As you can see, most Interpol undercovers are recruited former gang members, and so, to get your training, it's simplest to join a gang before talking to Interpol so you don't have anything to hide while the gangs teach you how to poison, murder, and rape, until they trust you, and then you can sneak away and join Interpol.
Plus, you should know at least three language... ideally five.
