Is there a flash calendar that can be embedded and have a user pick a date and send me a message when the user picks an open date?

I think you could probably do your own Flash calendar using a neat little tool called SproutBuilder: http://sproutbuilder.com/

I wouldn't you flash for that I would make a Google Account and use Google calendar for what you want to do. I believe you can allow people to edit a public calendar and it will email you when people post to it. To post it I would use an iframe and position it with css. AJAX looks almost like flash.
