is olive oil good for frying?

Frying foods with olive oil is dangerous in comparison to other cooking oils due to its lower than average smoke point. Olive oils have a much greater danger of flashing to fire especially in shallow frying where the temperature can go up dramatically in a short period of time.

I learned this the hard way by starting a oil fire in my kitchen a few years ago and now there is a commercial grade fire extinguisher in my kitchen freshly charged and accessible at all times.

If you must use an olive oil to fry the lighter the better.
Never use extra virgin olive oil it has the lowest smoke point and is the easiest to start a fire with.
Below is a good estimation as sources will vary of the smoke points of the different styles of olive oil.
Extra Virgin - 320°F /160°C
Virgin - 420° / 216°C
Pomace - 460°F / 238°C
Extra Light - 468°F / 242°C (1)

Choosing a frying oil that has a smoke point of 190 degrees C (375 degrees F) or over will be best but the higher the safer you, your kitchen and your food will be.
These oils would be ideal for frying
Safflower 265 degrees C / 509 degrees Fahrenheit
Sunflower 246 degrees C / 475 degrees Fahrenheit
Soybean 241 degrees C / 466 degrees Fahrenheit
Canola 238 degrees C / 460 degrees Fahrenheit (2)

Never try to sacrifice safety for conveinence or flavor.
Always keep a kitchen fire extinguisher handy and charged.

Not really. Olive oil has a tendency to burn. Use a lighter oil like sunflower or vegetable oil.
