By that standard it is indeed cannibalism if you eat yourself, or a portion of yourself.
The Miriam Webster Online Dictionary defines cannibalism as "one that eats the flesh of its own kind".

So there is a second authoritative source that seems to indicate that you are indeed praciticing cannibalism if you snack on, say, your own thumb during afternoon break at work.
There are other, less authoritative sources which define cannibalism as those who eat the flesh of OTHERS of their own kind. By that standard you would NOT be a cannibal if you ate yourself, only if you ate others.
I tend to think it is cannibalism.
