Is it better to put excess food down the disposal or in the trash?
Which the better for the environment?

Best order:
1. eat all the food yourself
2. scraps/slop to animals
3. compost bin
4. trash
5. garbage disposal
Anything that goes down the drain must be filtered, treated with chemicals, then released into natural water system. This water must come back into your taps for bathing, cooking, drinking. Better to reduce the energy and time spent making it clean again.
Also, anything that goes down the drain adds to your maintenance liability. I used to do maintenance at an apartment complex. Amazing what people throw down the drain. Enough food for an entire meal, processed in the garbage disposal. Pots full of cooking oil.
