Cabbage soup can be a part of a healthy diet in any season. Cabbage juice has been recommended in some medical journals as a helpful treatment for ulcers. Here is a recipe for delicious cabbage soup and a simple recipe for cabbage juice.
Cabbage Soup
2 medium unpeeled potatoes, sliced 1/4 inch thick
3/4 cup vegetable broth OR chicken broth
1/2 head of medium sized cabbage cut into 1-inch pieces
Seasoning to taste: salt and pepper Or 2 teaspoons curry powder OR sprinkle with crushed red pepper
Cook potatoes in broth til tender. Add cabbage and seasoning to potato mix. Cover and cook on medium-low til cabbage is tender.
NOTE: Turnips can be used in place of potatoes -equally delicious!
CABBAGE JUICE for ulcers
(from "Prescription for Nutritional Healing" second edition by James F. Balch, M.D. and Phyllis A. Balch, C.N.C.)
1/4 - 1/2 head cabbage
1 apple or 2 carrots
1/4 cup steam-distilled water
1. Thoroughly wash the vegetables and fruit, peeling the apple or carrots if they were not
grown organically. Cut the produce into small enough pieces to fit into the juicer.
2. Process the vegetables and fruit in the juicer. Add the water, and drink immediately.
Do not allow to stand.
