The FDA recommends avoiding overcooking food, especially those foods like bread and potatoes, that can form acrylamide. They also recommend scrapping off the burnt bits of toast and storing potatoes in a cool dry place ( stops the formation of too many sugars, which are the precursors for the formation of acrylamide.)
And like most things, too much isn't good for you so if you like your toast crunchy, try to keep it not so black :)

M$When the toast burns it produces things called 'carcinogens' that increase your chance of getting cancer because the burning leaves carbon as the residue.
