Burnt toast forms acrylamide, the same substance detected in charred meats and fried food. The level of acrylamide increases as the toast gets more and more burnt. Its only a small amount but tests indicate the substance could be carcinogenic. There are also levels of benzopyrene if the food is cooked inefficiently ( not properly oxidized )

The FDA recommends avoiding overcooking food, especially those foods like bread and potatoes, that can form acrylamide. They also recommend scrapping off the burnt bits of toast and storing potatoes in a cool dry place ( stops the formation of too many sugars, which are the precursors for the formation of acrylamide.)

And like most things, too much isn't good for you so if you like your toast crunchy, try to keep it not so black :)

Yes
When the toast burns it produces things called 'carcinogens' that increase your chance of getting cancer because the burning leaves carbon as the residue.
'Not so much 'carbon' that's carcinogenic, but the complex carbon compounds which result from the charring process, when the carbohydrates etc. are broken down ('pyrolised') by the heat.'
'Carbon itself is not carcinogenic: after all, diamonds, not known for causing cancer, are made entirely of carbon and indeed it's a major consituent of the human body. However, 'black' carbon like graphite and burnt toast has been touted as a possible carcinogen becuase it is a roughly flat molecule.'
'I believe that whilst barbequing meat produces compounds which are known carcinogens, people who eat plenty of chargrilled meat do not have a noticeably increased risk of cancer.'

That's odd. I've eaten plenty of burnt toast. I've also voluntarily eaten burnt chocolate chip cookies growing up just because I could have as many as I wanted.

Never as burnt as that picture above though. Pretty sure anything that looks like that is bad for you.
