Is beer really made by fermentation caused by bacteria feeding on yeast cells and then defecating?

No. Bacteria are not involved in any of the common kinds of beer. Basically the yeast eat the free sugars from the malt and the yeast's waste products are alcohol and carbon dioxide. The yeast are microscopic, single celled organisms and it is misleading to speak of them as defecating.

Wine, hard cider, perry, mead, all liquors, and fuel alcohol are all made through the process of fermentation by yeast, although some require additional processes.
