I think the easiest ways for developers to do this is to run the app in the emulator, and use a tool to capture the emulated video.

Of course if you're looking to do something for which you don't have the source code (Create Demos for review website), then I think the best alternative is to Jailbreak your iPhone, and install 'un-apple-sanctioned' tools which allow you to capture video of what you do from your device.
DemoGod's capabilities are detailed here. It requires screensplitter installed from the Cydia store.
The strength of the demogod solution is the phone doesn't need to be connected, and allows you to screen capture directly on your computer (built-in feature of Mac OS X 10.6) from the iPhone.

What's the best way to record a screencast of an iPhone app (without filming screen with a separate camera or jailbreaking)?
Looking for way to record the native screen activity of the iPhone on the Mac. I was thinking about using a screen capture app along with the emulator that comes with the iPhone developer tools. Is that the best way?

Cool thanks. I'm looking to do it for review purposes (don't have source code). I have heard of DemoGod but have been hesitant to jailbreak. Hopefully Apple releases something official at some point. Until then I might have to jailbreak. Thanks for advice!
