Extracting apps from iPhone backup?
I've just had to restore my 1st-gen iPod Touch to factory settings, and have lost all my settings.
I've gone into the library/Apple Computer/MobileSync/Backups directory and noticed a number of separate backups, including one made yesterday before restoring to factory settings.
If I backup again, it will create a new, separate backup folder, right?
I've downloaded Reincubate's "Backup Extractor" but am a little confused about how it works. If I select an app to restore, such as Distant Shore, it will restore the version of it that was on my device before I backed up, including all associated application data? If I restore Stanza or eReader, all my e-books will come with it?
Annoyingly, Backup Extractor wants me to pay $25 to be able to copy out more than one single file at a time. Is Backup Extractor really necessary? Can I copy out files by hand if I put them in the right place? (What is the right place?) Is there some free Windows app that will do the same thing?

Unregistered Backup Extractor for Windows extracts only one file at a time. Not one app, one FILE. And I need to restore thousands of them.
