This dish is called the 'national dish' of the Philippines. It is very popular, you can always taste this dish in any Filipino gathering.

I have the recipe below, from a friend of mine. I love this dish, so does my kids. I cook this dish myself, filipino restaurants are far from my place.

Chicken Adobo (Filipino version) - the word ' Adobo' means marinade or seasonings in Spanish, where the meat , fish, etc. are marinated in the desired spices or herbs. In Filipino Adobo, the chicken is marinated in garlic and vinegar which is the main ingredients of the dish. So, Adobo has a lot of versions in different spanish countries.

Ingredients:
2 lbs chicken (cut in medium pieces)
1 head garlic, chopped
1/2 onion, chopped
1/4 cup soy sauce
1/2 tsp. salt ( if cutting down in sodium, put the salt at end of cooking)
1 tbsp. sugar
1 tablespoon ground black pepper (or black peppercorns)
2 cups water
1/2 cup vinegar (rice vinegar or white wine vinegar work best)
2 bay leaves
2 tablespoons cooking oil

Directions:

In a deep casserole, put chicken pieces, vinegar, bay leaves, pepper, soy sauce, onion ,garlic and water. Cover and cook slowly about 20 minutes or until half cooked.

Take out chicken pieces and fry it in cooking oil (vegetable oil or any oil you prefer) in a non-stick frying pan, in medium heat just about brown in color. Be careful, it might splatter. Frying gives a delicious flavor to the chicken. After frying all the chicken pieces, bring it back into the broth in the original pan . Let it simmer in medium heat, for another 20 to 25 minutes or until chicken is tender. This dish is saucy.

Adjust salt and pepper as desired at end of cooking.

It is usually serve over plain rice.

Hope you'll like it.

I've been told by Filipinos that Dinuguan is something to be scared of, and I believe them. Also Durian has scared me many times. But there's one plant that goes well with everything I've tried, is crazy healthy, is being used to combat malnutrition in Africa, and grows like a weed in nature.

Malunggay (also called Horseradish Tree)
Check out these articles to read up on all its benefits.

Is Malunggay the leaf used in Chicken Tinnola? If so, it grows outside my house but I did not know it had so many nutritional uses.

Sili (chili) leaves are used in the Tinola recipe, but sometimes those are substituted with Malunggay. Malunggay has little taste to me, but tastes a little like spinach. I'm going to grow a tree or two outside the home I purchase.
