Chocobos, in Final Fantasy VII, are both male and female. First, to determine the gender, you need to catch a chocobo. When you move your caught Chocobo from the paddocks to the stables, the gender gets determined automatically. You can’t find out the gender beforehand; you have to go to the farm where the guy Chocobo Billy tells you the gender.
If you specifically want a male/female chocobo, then you could save the game outside the chocobo ranch. Keep resetting and battling till you get the gender of your choice. There is a 50% probability that you’ll get a male or female. So it’s not that hard. You can name the caught chocobos, so you can keep the genders all straight in your mind.
