I'm thinking about visiting Maine since I've never gone. What is the one thing I really need to do/see there?

The coast! It's beautiful. You can travel route one up the coast, from one end of Maine to the other. I suggest going to Eastport and then to Calais, Maine. There you will see the most eastern point in the United States and also observe one of the world's largest tides! From Calais you can cross over the boarder into Canada which has there own interesting sites.

Food-wise, without a doubt, you need to eat some lobster and/or crab. There is this little stand by the side of the road in Wiscasset, Maine, called Reds Eats. I've eaten there every time I've been to Maine, I think. The lobster rolls and crab rolls are great.

My first choice to visit in Maine is the Portland Head Light Station which has been called the "most photographed lighthouse in North America." This lighthouse is located in Cape Elizabeth, Maine and is visited by nearly one million tourists per year.

I went when I was a kid and sat eating lobster in a small town on the coast near Bangor, during the 4th of July fireworks (I'm canadian but it was great). I couldn't tell you a good place to go while in Maine, but i would recommend that time of year. It had a lot more 'town' stuff going on. And staying in a Bed & Breakfast, instead of a chain hotel, makes for a cozy pleasant experience.

Maine and Oregon are a long way apart!

Try food in both states. Every state is unique for their own specialities.

They are, but they are two of the short list of states I am yet to visit, so I'm trying to determine which one I'll visit first

Your best bet is to visit Bar Harbor Maine. It is beautiful. There are all kinds of shops there and many things to do. Also Eastport Maine, you can stand right at the most eastern part of the US.
