I'm thinking about preparing tea - any ideas?

The most important ingredient in tea is the tea itself. Use a high-quality loose-leaf tea and make sure to brew it properly. You can use anything, but probably the best choice for an authentic British-style afternoon tea is to use Darjeeling black tea:

If you want to go fancy, you can buy Darjeeling first flush; it has a very light quality, perfect for an afternoon tea.

What to serve? In my opinion, a must-have is scones. Scones are a perfect accompaniment to afternoon tea; crumbly, not too sweet. I especially love black currant scones, but you can make (or buy) all sorts of great scones: cinnamon, cranberry, raspberry are some good options.

What else to serve? I love little watercress sandwiches, which can be served on small pieces of bread or on crackers. Use a light, mild cheese like cream cheese or a goat cheese if you want to get fancy, and then put a little fresh watercress on each one. Adding thin slices of cucumber are also very tasty. Fish is a classic ingredient on these sandwiches; you can use lox (smoked salmon) if you want to get fancy. Ham sometimes works well.
