I'm going on a girl's weekend getaway for 3 days and am looking for simple meals to cook. Need meal ides with very few ingredients.

Hi psycgirl,

That sounds like fun! I've thought about doing the whole "weekend in a cabin" thing before, but I never actually have, so I'm kind of just winging it here.

Instead of specific recipes, I think I'd try to think about versatile ingredients … you know, things that can be used a lot of different ways, and taste different each time. For example, smoked or italian sausage could be tossed with pasta, onions, olive oil, and tomatoes for dinner, maybe with some bread served on the side. The you could use onions, tomatoes, and sausage with eggs for breakfast, served with the same nice bread, only toasted this time.

You could even get another meal out of those same three ingredients (sausage, onions, tomatoes) if you added a black bean and rice mix, and sauteed it all together.

Potatoes are also very versatile, and are especially great if anyone in the group is a vegetarian. Fried potatoes taste completely different from mashed potatoes, or baked potatoes. Sea salt, olive oil, garlic, cheese all change the taste even further.

Just a few ideas off the top of my own head, but I'm sure there are loads of others if you search the web for "meals with few ingredients."

Also, as a side note, I've always thought that if I did do a cabin vacation, I'd take along a crock pot or two, so I didn't have to spend all my time in the kitchen, and so that there was food always ready. But, then again, part of the fun will probably be in the actual cooking, so this idea may not appeal to you … plus the crock pot would take up extra space.
