SEASON THREE was when the Simpsons really hit their stride. They started using more random cutaways ("Little Land of Chocolate") and they got more great guest stars (Michael Jackson, Aerosmith, Steve Allen).
SEASON FOUR was probably the funniest season of the Simpsons. Their writing staff included Conan O'Brien, who wrote some of the most classic episodes of the show: "Marge vs. the Monorail" and "New Kid on the Block." Guest stars included: Johnny Carson, Bob Hope, Elizabeth Taylor, and David Crosby. (I watched this season so many times that all my DVDs are physically unwatchable.)
SEASON FIVE was like the son of season four. Season five was when the original writing staff was quitting and they had the mentality of, "What are they gonna do? Fire us?" which came across in some of the most random jokes of all time like Sideshow Bob stepping on rakes and the annual Halloween special suddenly breaking into a parody of a Charlie Brown Christmas.
To me, SEASON SEVEN seems like a collection of episodes that were spawned by the writers thinking, "Why didn't we think of this before?" In season seven, we meet Homer's mom, Homer takes Smithers's job, and Homer gains 150 pounds. This season also includes two of my favorite episodes of all time: "The Simpsons 138th Episode Spectacular" (a clip show in disguise) and "22 Short Films About Springfield."
Just as season five was the song of season four, SEASON EIGHT was like the son of season seven. In season eight, we meet Mr. Burns's son, the Simpsons move away from Springfield, and a new character is added to "Itchy & Scratchy." This season also had some major turning points for the show like Milhouse's parents getting a divorce and Principal Skinner starts dating Mrs. Krabappel. This season also includes the completely random, but completely hilarious "Simpson Family Smile-Time Variety Hour."

Interesting, I wonder if age has anything to do with this? How old were you when the Simpsons came out? I watch the newer episodes and they seem to be hit and miss, comedy wise.
I can honestly say not born ;) Year after the first in 1989 I was.
After the new animation the old animation to me is unbearable, and sound quality, so like I said latest 5 seasons and then they'll have more recent events also :)
Ah, that makes sense, myself (an old fart at 28) remember watching the Simpsons back in the 90s on an old fuzzy TV back when animation quality was unimportant and the sound quality was par for all of TV.
Give seasons 3 through 8 a shot, don't be distracted by the animation/sound just take in the comedy, some of those episodes are 22 solid minutes of comedy genius.
