I think its essential to have a good amount of counter space - you need somewhere to put the big serving trays and stuff ( and beer ) when you cook and when you finish. A sink is a bit of a luxury but wow, really handy in washing the salad stuff and getting it ready, really handy for washing up those dirty BBQ tongs and really handy for making sure cook doesn't wipe dirty BBQ grease all over new shirt ( don't you hate that!!!! )
