Hello mmng23,
If you are making Aioli then you need two egg yolks and you can get a detailed recipe for it here http://www.gourmetsleuth.com/Recipes/Sauces-244/Basic-Aioli-Garlic-Sauce-490.aspx. Now making Aioli is pretty hard as it tends to separate easily. Most some people fail at first and have to try a few times to get it right.
However, it is easy to fix an Aioli when it separates according to the link mentioned above. You just have to add one egg yolk to a bowl and whisk the separated portion you were previously working on into it. The addition of the egg yolk and the whisking will emulsify the whole mixture again and your Aioli will be perfect. However, if you are not using egg yolk or mustard you can use water to emulsify the separated Aioli as described in this link http://www.ehow.com/about_4731028_aioli.html
If you are combining the separated Aioli with an egg yolk and trying to re-emulsify it; it is recommended that you whisk slowly and use an egg yolk which is at room temperature.
