I want to build an iPhone app... where do I go to find the best information on how to do it?

I've been looking into this as well. I wish Apple would allow those < 18 to develop and publish applications on the App Store, though. Anyway, here's some of the resources I've found.

Books:
iPhone SDK Development by Bill Dudney and Chris Adamson. It's available as a beta book right now (ebook), and will be released in physical form later this year.
Amazon.com: search for 'iPhone SDK', sorted by bestselling

Videos:
