I want ideas for a BBQ Christmas in Australia?
We have lots of lamb
And salads
And ham and turkey
And prawns

This Christmas I intend to get a large fish, maybe a large schnapper or Red Emperor and cook it on the BBQ.
I split it and open it up in two halves (have the fish monger clean and scale for you), rub a little salt and a little brown sugar on it and leave for say 40 minutes in a cool place, wash off and dry, cook in a Webber or another kettle type BBQ using woodchipps to add to the coals for smoking. The BBQ heat needs to be indirect and the woodchips soaked before adding.
The whole fish cooks and smokes slowly and because you haven't added any other flavours i.e. spice the subtle flavour of the fish comes out.
