Sorry its taken a while to get to your question, Anyway....
Martha Stewart has a great Champagne Vinaigrette recipie thats incredibly easy to make.
Make the champagne vinegar by leaving champagne an open, room temperature for a few weeks then Add 2 teaspoons Dijon mustard, and drizzle in 3/4 cup extra-virgin olive oil whiles whisking constantly add salt and pepper to taste
