I need recipes for Mexican food, where do I go?
How can I find recipes for authentic enchiladas? Are there good recipes for mole sauce or salsa? How can I make guacamole like the restaurants?

Rick Bayless is an authority on everything that has to do with Mexican cuisine. He has traveled all over Mexico and has developed some great recipes, both of his creation and authentic Mexican recipes. Or you can purchase one or more of his cookbooks, Mexico, One Plate at a Time, is a great cookbook to learn the basics of Mexican cooking.
There are a million recipes for enchiladas and mole alike, this all depends on what part of Mexico you enjoy the food most. Mole can be sweet and spicy or it can be hot and savory. Bayless has several recipes for various versions in his books.
The best guacamole is the most basic. You have to use the Haas variety of avocados. These are the dark ones with the bumpy skin. They have the best flavor. Take your avocado, very little onion, some diced tomato and some chopped cilantro. If you like your guacamole a little spicy, then you should add a yellow chile. I would stay away from adding jalapeno to my guacamole because that can be too spicy for some people and you don’t want to detract away from the avocado. Mash it together, add some lime juice and salt and that is the best guacamole. This is a variation of what most restaurants do tableside for its’ diners.
