I have problems with my pie crusts shrinking when baked. How can I avoid that?

How can I prevent a single, unfilled pie crust from shrinking when baked?

Here are some tips to help:

* generously prick the unbaked crust with a fork after placing it in the pie pan
* fill the unbaked shell with dry rice or beans; remove them a few minutes before the baking time is over
* place an empty pie pan in the crust before baking
* avoid overstretching the pie crust when you are transferring it to the pie pan.

I cover the edges of the pie crust with reynolds wrap. Then about the last 10 mins. or so, remove for it to brown.

Supposedly adding vodka to a pie crust keeps it crispy. Half the water in the recipe and put in vodka instead.
Here's cooks illustrated "Fool Proof Pie Dough" recipe
Ingredients

2 1/2 cups (12 1/2 ounces) unbleached all-purpose flour
1 teaspoon table salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into 1/4-inch slices
1/2 cup cold vegetable shortening, cut into 4 pieces
1/4 cup cold vodka
1/4 cup cold water

Another thing is to not let it rest too long before filling. Letting it rest before filling allows the gluten to develop, which will make it shrink when heated (since gluten is a protein and proteins usually shrink when heated past a certain point).

Finally, if the oven is not hot enough, it can shrink--again, the protein isn't heated fast enough to set it, so the pie shrinks.

Put a pinch of baking powder in your pie crust dough before you roll it out! It will "expand" when baking, in a ratio pretty much equal to the "shrinking" it would do, without the BP.
