I have made toffee for years but lately the butter seems separte from the candy when I put it in the refrigerator to cool

My recipe has been for years....1 cup sugar, 2/4 cup of unsalted butter, and 2 Tbsp water. It has never fail until the last couple of years. I place Hersheys chocolate bars on top and sprikle with a few nuts. As it hardens, the fate from the butter seem to cover the candy and it has a whitish color come to the top as it hardens. Is there help for this question.
