M$For the relatively small amount of potatoes you need to store, though, I would put them in a paper bag and keep them in a cool, dark place, like a cupboard or pantry closet or in a garage as long as the garage doesn't freeze. Don't wash them first, by the way. Keep them dry.

M$I am living in a condo. So the can buried in the ground is not going work for me. I will try the paper bag method though.
Yeah, I didn't mention that because I was suggesting it as a storage method for you. Just extra info. Most people don't keep THAT many potatoes around. :-)
I had no idea potatoes could be stored that long - that's fantastic! If I had a root cellar, I'd only allot one corner for roots, because the rest of the space would be for wine. :)
You might also wash and cut the potatoes into cubes cool then on a baking sheet then freeze them individually on the baking sheet. After they are frozen, portion out the cubes into freezer bags. Later you can use them for creamed potatoes, soups, stews, or even thaw them and warm them to eat similar to a baked potato with sour cream, butter, bacon bits, chives or your own favorite topping.
