I fancy something different for dinner, any suggestions?

Of course, it depends on what you like, but I like to sometimes make huevos rancheros for dinner, not just breakfast or brunch. The way I make it is very easy.

Here's the basic how-to and what you'll need to serve two people...

Ingredients:

*Eggs, two per person
*Corn tortillas, small, three per person
*Refried beans, 1/2 can per person
*Green enchilada (or chili or chile) sauce, 1/2 can per person
*Cheddar cheese--mild, medium or sharp (your choice)
*Olive oil
*Flour tortillas--white or whole wheat--1 large per person
*Salsa

Directions:
Heat the refried beans either in a saucepan or in the microwave
Warm the tortillas, either in a frypan with a little oil or in a microwave
Heat the green enchilada sauce (or you can use red if you prefer) in a saucepan
Cook the eggs over easy or over medium

Note: If heating the beans and tortillas in a microwave, I suggest layering them (beans, then cover with corn tortillas) and then cover those with a large tortilla to hold in the moisture AND to prevent splattering of the beans. Then I fold the top tortilla (see image below) and serve it on the side of the dish, using it to scoop leftover sauce, cheese and egg yolk). This is optional, of course.

To serve, layer the food on the plate like this:
Beans on the bottom, then cover with the three corn tortillas. Place the eggs on top of the tortillas and then spoon some enchilada sauce over everything. Top with shredded cheese, which will melt on the hot food.

Optional add-ons and sides: salsa, avocado, meat such as chorizo, fresh fruit, Spanish rice, homefried or hash brown potatoes.

My sister and I got stuck in a rut of always eating the same things, so we came up with a system for trying new food. For each week, we make food from a different category each day (unless we're eating the leftovers). Below are our main categories with a few recent favorites (I'm a veggie, so it limits our choices). Recipe links are at the bottom.

casserole - Seven Layer Tortilla Pie
pasta - Pasta Pomodora
salad - Spinach Salad with Grilled Mediterranean Vegetables
ethnic - Spanakopita (Greek Spinach Pie)
sandwich - Cucumber Sandwiches
vegetarian - Vegetarian Chickpea Sandwiches
pizza - Uno's Deep Dish Pizza

Pizza Stew. Familiar, but different!

It's pretty simple:

Brown a lb. each of ground beef and bulk Italian sausage (hot or mild, your choice). Dump it in your slow cooker if you have one, in a soup pot if you don't.

Chop up half an onion, and half a sweet pepper if you like it, and brown it in the fat left from the meat. Throw that in the pot too.

Add 1 12-oz. jar of pizza or marinara sauce; 2 cloves of garlic (or 1 tsp. minced from a jar), 1 tsp. crushed Italian spices (single or a blend).

Also add any other pizza toppings you crave: pepperoni, pancetta, black or green olives, mushrooms, anchovies, capers, etc., but no cheese at this point.

If it's in your slow cooker, turn it on low for 5 hours. If it's in a soup pot, turn the burner on the lowest point for around 2 hours. Cover whichever one you're using, of course.

At the end of the cooking time, add 2 cups of your favorite cheese for pizza: Italian blend is mine, with mozzarella, Asiago, Provolone, Parmesan etc. but you might like just mozzarella or the old Pizza Hut blend that includes cheddar. Whatever you like! Just TOP it with the cheese, and put the lid back on for around 45 minutes for the slow cooker or 20 or so for stovetop. The cheese should be melted and starting to brown a bit.

Serve in bowls with an Italian salad.

This is my family's favorite thing for New Years Eve, football parties, etc.

Hope you like it! Any way you like to top a pizza, you can use here! If your favorite has pineapple and pepperoni, then use that. If you do a Mexican one, just use something like Chorizo instead of the Italian sausage. I wouldn't try a seafood pizza quite this way, though, but for more meat-based ones it is truly the bomb. Matter of fact, I hadn't done this in a few weeks, and writing this made me hungry enough to go buy the ingredients for it. :-)

How about baked whitefish (with butter and lemon) with a rice pilaf, carrots, and some white wine? You can pick up all the ingrediants at the store and be eating a nice meal in an hour. Candles and a tablecloth will make you feel like you are in a fancy restaurant. I have often prepared this for a special treat.

For me a simple and different meal for dinner is putting breakfast ingredients together. It might sound crazy but its super easy and cool. The meal consists of some soup, omelette and a bake of bread and tomatoes.

You will need for 2:
tomatoes- 2 nos
Bread - 5 pieces
Basil- 5-7 leaves or half a teaspoon of crushed dry basil
salt and pepper according to taste
olive oil to mix all ingredients and any cheese of your choice cheese

For the omelet
eggs- 4 nos
milk- 1 tbsp
onion -1 chopped
any good quality pepper - 1 chopped
salt and pepper to taste

Start with the bread dish. Chop up the bread into small cubes. Chop the tomatoes and basil. mix these ingredients together with some salt pepper, cheese and olive oil. Transfer to a baking dish and bake for 20 minutes at 350 F.

Beat eggs for the omelet. Add milk salt pepper, onion and whisk again. make one omelet at a time.

Plate these together along with some store bought piping hot soup.

Delicious!! Enjoy!!

Spaghetti and meatballs is always easy.

I get a hankering for curry now and again, it's pretty easy as well.

MMm, I would have my most favorite all time dish, but this one requires a bit more work: homemade salsa and sticky rice. MMMmmmm yummy.
