I bought an XBOX 360 Pro before they had HDMI. Can I still export 1080p to my TV through a component cable?

Yes, so long as your TV can accept a 1080p signal from a component source.

This was added in the Novemeber 2006 update.

From the Xbox.com feature list:

NEW FEATURES
- HD 1080p video mode support over VGA and component cables.
