I am moving and am wondering if I can take my central air conditioning unit with me. Thanks.

First of all, did you buy the air conditioner, or was it there already ( you never stated if this is your home or a rented apt.) If you have bought it yourself, and if it's a split system airconditioner ( these have indoor unit, and outside motor unit) you could dismantle it, and take it with you. It may be a all in one unit, but you didn't say) If it's a unit in the apt., that is connected to a shared motor, then it's not possible. If it's portable, and you purchased it, the answer is yes.
