I am in the mood for a good cook book. Anyone know some good ones?

What I really like about Julia Child's The Art of French cooking is it explains why you use a particular technique when cooking. For example, why blanching vegetables is important, why you must not use certain types of bowls/spatulas with acidic foods and so on. It also breaks the steps out in the order they must be followed in a neat way that no other cookbook has.

As a 2nd option, I really like my Good Housekeeping cookbook.

It would help to know more specifics. Are you a beginer cook or more advanced? Do you want a book that covers basic/essential recipies or are you looking for new stuff to entertain and impress with or something well rounded with bits of both? Are you looking for foriegn cooking?--That's a whole different kettle of fish.

The suggestions above are fine. My leanings for cookbooks are torward those with a "science of cooking" bent: Alton Brown's I'm Just Here For the Food is one. Lately I've been getting a ton of things from the magazine Cook's Illustrated, enough that I invested in a subscription; they test dozens of iterations of recipies to get at one they believe is the best. They collect the recipies from the magazines in cookbooks of course and I'd recomend any one of them even sight unseen.
