M$The suggestions above are fine. My leanings for cookbooks are torward those with a "science of cooking" bent: Alton Brown's I'm Just Here For the Food is one. Lately I've been getting a ton of things from the magazine Cook's Illustrated, enough that I invested in a subscription; they test dozens of iterations of recipies to get at one they believe is the best. They collect the recipies from the magazines in cookbooks of course and I'd recomend any one of them even sight unseen.
