Hello,
If you are referring to the acidity of the tomatoes, which can vary greatly, you have a couple of options.

1. You could reduce the acidity with baking soda. Start with 1/8 teaspoon per quart, stir, taste, and repeat if necessary. (This method will cause slight foaming in the soup, which will disappear eventually)
2. You could mask the acidity with sugar. Start with 1/2 teaspoon per quart, stir, taste, and repeat if necessary.
