How to prepare kimchi?

I had a Korean friend when I was still working in a hospital. She works in the hospital kitchen and she often invite me over dinner at their place. She prepared Kimchi and it was my first time to taste that dish. She said it is a traditional and favorite Korean recipe. They moved to another place and I didn't get to ask her for the recipe. Do you know how to prepare kimchi? Please share it with me.

I also had a Korean friend in college but I was able to get the Kimchi recipe from her. She said they are different types of kimchi recipes, but this recipe is the basic one. I love it and made it on father’s day. Hope you would like it to.

*Kimchi recipe

INGREDIENTS:

450 gm Napa Cabbage (chopped)
1 tablespoonful Green Onions (fresh and finely chopped)
1 tablespoonful Garlic (Fresh and finely chopped)
1 tablespoonful Ginger (Fresh and finely chopped)
1 tablespoonful Dried Red Chili Pepper Flakes
2 teaspoonful granulated Sugar
4 cups Cold Water
3 tablespoonfuls fish sauce
3 tablespoonfuls Sea Salt

PREPARATION:

• Wash the cabbage leaves under clear running water.

• Sprinkle 2 tablespoonful of sea salt on the cabbage leaves.

• Put the salted cabbage leaves into a large bowl and Add the cold water then using a plastic wrap, cover and put in refrigerator overnight (if you need to make it on the same day, you can keep in the refrigerator for three hours, making sure that the water covers the cabbage properly).

• The Next day, pour out the water and rinse the cabbage leaves thoroughly.

• Get a large bowl and place the cabbage into it, add the green onions, garlic and ginger into the bowl, chili flakes, fish sauce and sugar. Mix thoroughly.

• Get an air tight container and put the mixture inside and refrigerate it.

• Serve anytime you want and enjoy
