My muffin recipe is easy to prepare and it will be ready for just a few moments of preparation. The amount of calories per serving is just 304, total fat is 12.2g and cholesterol is 54 mg. Ingredients
* 1 (8 ounce) package cream cheese
* 1 egg

* 3 tablespoons brown sugar

* 3 tablespoons butter
* 3 tablespoons chopped pecans
* 2 1/2 cups all-purpose flour
* 2 cups white sugar
* 2 teaspoons baking powder
* 2 teaspoons ground cinnamon
* 1/2 teaspoon salt
* 2 eggs
* 1 1/3 cups canned pumpkin]

Directions
1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour 18 muffin cups, or use paper liners.
2. To make the filling: In a medium bowl, beat cream cheese until soft. Add egg, vanilla and brown sugar. Beat until smooth, then set aside.
3. For the streusel topping: In a medium bowl, mix flour, sugar, cinnamon and pecans. Add butter and cut it in with a fork until crumbly. Set aside.
4. For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt. Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth.
5. Place pumpkin mixture in muffin cups about 1/2 full. Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
6. Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes.

4 eggs
2 c sugar (white)
1.5 c of oil
2 c cooked pumpkin
3 c flour (white)
2 tsp baking powder
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger

Here is how to prepare for it:
1. The oven should be preheated up to 350 deg F. Get the cooked pumpkin and mashed it using a fork or a potato masher and put it in a large bowl.
2. Next is mix the 2 cups of sugar, 1.5 c of oil and 4 eggs that are beaten.
3. Mix thoroughly the 3 cups of flour, 2 tsp of baking powder, 1 tsp of slat and 2 tsp of baking soda in a separate bowl.
4. Pour in 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger and 1/4 tsp all spice to the mixture of the flour.
5. Pour in the liquid mixture to the flour mixture a little at a time. Mix them completely.
6. Get 2 large muffin tins and spray with cooking spray or add cake papers if you have to the tins.
7. Put the muffins in the preheated oven and cook for 20 minutes or until the muffins top becomes light brown. You can use a toothpick and insert it on one of the muffins to see if the insides are cooked. The toothpick will come clean when they are fully cooked.
