How to make Ghee?

Ghee is nothing but clarified butter.
This can be made at home by following the steps given below.
Steps:
1. Heat unsalted butter in a heavy bottemed pan,until it bubbles.
2. Reduce heat and continue boiling by adding a few curry leaves or drumstick leaves if not a bay leaf and keep boiling uncovered until butter turns to a clear golden color.
2. Once you find foams on top, it is an indication that the ghee is done.
3. At this stage make sure that the water content in the butter is completely dry. To check on this ,take a drop of the heated butter on a piece of paper and light it if it makes a fluttering noise it means it is still not dry. Then continue heating a few seconds more.Remove from fire and add a oinch of salt. This would help give a nice texture.
4. When cool strain it on a muslin cloth. This would seperate the scums .
5. Store in a clean air tight bottle. Dosent require refrigeration.
6. The leaves added to the ghee gives it a nice flavour and also helps seperate the scums.
