This is a classic dessert in both Greece and Turkey. The following recipe is awesome.
Greek Baklava:
-----------------------
Ingredients:
--------------
500g plain flour
2 tbsp soft butter
1/2 tsp baking powder
a pinch of salt
200g blanched and chopped almonds
200g unsalted butter
100ml honey
200g Castor sugar
rind of 1 lemon or orange (finely grated)
1 tbsp finely grated cinnamon
275 g water
100g melted butter
method:
-----------
Sift flour with baking powder and salt. make a depression, add softened butter. Mix with fingertips and make a pliable dough. Cover with a damp cloth and keep for an hour. Make thin rolled rounds about 8 inch in diameter. These are called the 'phyllos'.
butter a baking tin and line the bottom with phyllo. Sprinkle with melted butter and scatter on some chopped almonds. Put on another layer of phyllo.Sprinkle with melted butter and then alternate with chopped almonds and phyllo.Sprinkling butter on each layer till you reach a thickness of about 1 1/2 inches. Finish with 3 layers of of phyllo ,sprinkle some more butter. With a sharp knife, make incisions on the top to divide the baklava into squares. Put the tin in a moderate oven for half an hour, then increase heat and bake for further half hour,so that the top browns.Let it get cold.
Boil honey ,sugar, rind and cinnamon with water, adding a little more water,if needed,to produce a pouring syrup. Pour the hot syrup over the cold baklava and let it get cold.
The baklava should absorb the syrup---it may not be necessary to use all of it. Continue the incisions right through to divide the baklava into pieces before serving.
