M$In missdemeanor cases there is no burden of evidence. Evidence needs to be provided only in criminal cases and this is not it. You can not dispute the ticket on the ground of evidence.
So I'd do it like this:
- admitt
- say you're sorry
- be humble
- say this will be a good lesson for you for the future
- promise not to do it again

And by saying you you admit guilt (that you really were talking on the phone). So that's not such a good idea.
