A few ideas for Sweet Potatoes and recipes that I have found for them are:

Baked Sweet Potato Sticks: Sliced and coated with olive oil, paprika and other spices

Twice Baked Sweet Potato: Like traditional twice baked potatoes, this potato is baked, the insides scooped out and mixed with cream cheese, brown sugar, walnuts, etc. and returned to the skin to be baked again.

Sweet Potato Muffins : Muffins made of Sweet Potatoes. Yumm...see recipe!

First thing is to preheat the oven to about 375 degrees F for about 3 to 5 minutes. Get a nice clean fork and pierce the sweet potatoes using utensil. With this, cooking is much easier because the steam can be released while the process of baking is taking place. Set the sweet potatoes right on top of the baking dish. Place it in the oven and then wait for about 45 minutes to bake. Remove it when the sweet potatoes become tender. Next slice the potatoes in half. Once the scooping of all the inner parts out of every sweet potato id done, you can combine them in a large bowl and mash them continuously and wait until the mixture becomes tender and soft. To the mashed mixture, get some milk and pour along with the sour cream and then mix to distribute the ingredients evenly. Next, you can pour in the brown sugar, salt and butter also. Continue mixing all the ingredients together and wait for the mixture to become light and fluffy. Bake the dish for about 25 minutes. Once done, you can serve.

I found this recipe!

Bake sweet potatoes in their skins Wash, cut off the ends and bake in a preheated 400 degree F oven for 40 to 60 minutes. Bake the potatoes on a baking sheet the sugars in the potatoes can drip out and burn on the floor of your oven.

Step 2Roast peeled chunks of sweet potatoes with onions in a 400 degree F oven for 40 to 60 minutes. Drizzle a little olive oil on the potatoes first.

Step 3Boil or steam peeled or unpeeled sweet potatoes, either cut into chunks or not, until tender. The time will vary depending on the size of the potatoes or chunks - from 5 minutes for small chunks to 30 minutes for whole potatoes.

Step 4Wrap peeled or unpeeled sweet potatoes loosely in plastic wrap (prick with a fork in a few places first) and microwave 10 to 15 minutes or until tender. (Use the Potato setting if your microwave has one.)

Step 5Mash cooked sweet potato and blend with butter and a little milk for a smooth puree. Add brown sugar plus cinnamon, cloves or ginger if you wish. A well-cooked sweet potato will mash almost instantly with just a fork.
