I usually wash the artichokes, trim off the top point, trim the sharp leaf point, trip back the stem to about 1 inch, remove the tough bottom leaves and peel the outer layer of the stem. Add crushed garlic to the boiling water, place rack with Artichokes into the pan, squirt fresh lemon over the chokes, sprinkle with kosher salt.
