Roasting London Broil in the Oven
The trick to cooking the London broil with this method is to quickly sear the meat on the stove first, locking in those savory juices before putting it in the oven.
#Preheat oven to 300 degrees.
#Remove marinated meat from refrigerator. Allow to come to room temperature.
#Preheat a grill pan on the stovetop until it is very hot.
#Carefully place the meat in the hot pan. It will “grab” as you lay it down. Don’t try to move it.
#Allow the meat to sear until it releases the pan, about 2 minutes or so.
#Turn the meat over with a set of cooking tongs. Do not pierce the meat with a fork to turn it or you will lose those precious juices within the meat.
#Sear the meat the same way you did on the first side.
#Remove the meat from the pan and place on a baking sheet.
#Place the pan in the oven on the middle rack.
#Roast for about 20-minutes, depending upon how thick the meat is.
#The London broil should cook to an internal temperature of 130 degrees Fahrenheit for rare.
#Remove from the oven.
#Tent the meat with a length of aluminum foil and allow to rest for 5 to 10-minutes.
#Carve into very thin slices diagonally across the grain.
