The early innovations like Adsense certainly came from "20% time" where employees are allowed to work on projects that interest them for 20% of their time. Scott Berkun's blog piece points out that 20% time isn't new and one needs a culture like Google to even make the concept workable.
Wikipedia (reference 124) says that Marissa Mayer, Google's Vice President of Search Products and User Experience in 2006 calculated that 50% of the new product launches originated from the 20% time.
The more interesting question is how much revenue comes from products derived from 20% time. This might be hard to calculate but Google needs some high revenue innovations if it is to sustain its growth according to this NetworkWorld piece.
In sum, there are many little products (e.g., keyboard enhancements) but the big hitters like Adsense aren't happening very often.
