How long do you let french press coffee 'simmer' before you press it?

There's a great website that teaches you all about the French Press, and how to make coffee with it. Not just how long the coffee should steep in the press, but how big the grounds should be, when to grind the coffee, and even how to pour the water.

Now, to answer your direct question, this is what they say:
"Steeping Time
Add the filter assembly, and start counting. For a small press pot like this one, a two or three minute steep time would suit. For a larger model, stick with the four minute steep."

If you're interested in making the perfect cup of coffee, I'd highly recommend reading the whole entry. But if you're content with just the basic amount of time to steep, then just follow that instruction.
