Ingredients
1/2 head of romaine lettuce (coarsely chopped)
1/2 head of Boston lettuce (coarsely chopped)
1 small bunch of frisée (curly endive)
1/2 bunch of watercress lettuce(discard coarse stems and chop coarsely )
6 slices of bacon
2 ripe avocados (deseeded , peeled, and cut)
3/4 pound whole skinless boneless chicken breast (cooked and diced)
1 tomato( seeds removed and finely chopped)
2 large hard-boiled egg white (finely chopped)
2 large hard-boiled egg yolk (finely chopped)
2 tablespoonful fresh chives (chopped)
1/3 cup red-wine vinegar
1 tablespoonful Dijon-style mustard
2 teaspoonfuls sugar
2/3 cup olive oil
1/2 cup blue cheese or Roquefort cheese (finely grated)
Salt
Pepper
PREPARATION:
*Get a frying pan or a skillet and cook the bacon until both sides are crisp. Take out of pan and place on paper towels to absorb the excess fat and cool. Then crumble it and keep it aside.
*Add the romaine lettuce, Boston, frisee and watercress into a large bowl. In a decorative manner, Arrange the bacon, chicken, tomato, and avocado over the greens and with the grated egg and the chives, garnish the salad.
*THE DRESSING: In a small bowl add the vinegar, mustard, oil, pepper and salt to taste and mix thoroughly.
*Next add the Roquefort and sugar to taste and mix again.
*Serve salad with dressing and enjoy.
