When making Crabmeat Mornay you will find many recipes which just call for any type of Swiss cheese. However, you have to remember that any type of Swiss cheese does not mean that it is Emmentaler otherwise known as “Emmenthaler” cheese. This specific cheese is yellow and medium hard and is characterized by the large holes that it has.
According to this recipe for Crabmeat Mornay available at this link http://www.gumbopages.com/food/app/crab-mornay.html four ounces of Swiss Emmenthaler cheese that has been grated is needed and one tablespoon of dry sherry.
Making this dish is pretty easy and it consists of melting the butter in a sturdy pot and sautéing the onions and parsley in it. The flour and cream then have to be blended separately and added to the pan, after which the cheese has to be added to the mixture in the pan and stirred until it melts. Soon after this the rest of the ingredients can be added with the crabmeat being added last.
