The Toshiba Folio 100 is powered by the NVIDIA Tegra 2 processor, while Apple's iPad is powered by their own custom processor named the Apple A4.
The processor running Toshiba's Folio 100 is reportedly 25% more powerful than the Apple's A4 in the iPad.
As far as the processor making a difference between tablets... it would depend on what you will be running on your tablet and what you're using it for. If it's for more leisurely purposes such as reading, gaming or movies, I personally don't think it will make much of a difference.
However, if you plan on doing some work on your tablet, and need to run some serious programs, then that 25% might make a bit more of a difference.
Hopefully this will help you decide which of the two is better for you and your needs, and good luck!
