How does the meat used for donner kebabs stay fresh?
Okay, I know they aren't good for you, but they are tasty and once in a while can't hurt can it?
What I don't understand though, is how the meat stays fresh, it appears to be cooked on the outside and sliced off as required, but what if it's not used up in one day, it is a large quantity, if is it then reused the following day, it could not be very fresh could it?

What an interesting question. I had never heard of Doner Kebab before. After my research, I could have lived not knowing about it. From my understanding, the recipe for this stuff is actually either a secret, like Coca-Cola, or it's just made from dumping leftover meat particles and pressing together. Maybe a bit of both or depends on where it comes from? Who knows!
It seems to be a popular treat of the drunks at 2 a.m., and is believed to be a mixture of lamb meat and/or leftovers.
What keeps it from going bad? My guess and some others on a forum... salt! Yes, this stuff has a great deal of salt and is highly processed. Which keeps it from going bad, but it bad for you as well.
Thanks for an interesting question, and I wished I hadn't of read so much about it. Meat is not something I enjoy a great deal of, so I don't feel I am missing out.
Here is an interesting quote

This is a Turkish snack I believe, at least it's always Turkish people selling them. Your dead right about the 2 a.m. drunks! I know it's really bad, but they are soooo tasty! (Can't remember the last time I had one though!)
